A brief biography on Chef Masamoto Hamaya

Born and raised in Japan, Chef Masamoto “Masa” Hamaya attended culinary school in Tokya with hopes of bringing his knowledge of how to prepare intricate, authentic Japanese dishes for an American audience.

Fast forward to today, and Masamoto has developed quite an impressive resume.

Over the course of his career, he has served in a variety of impressive roles including Executive Chef at Ozumo, the Executive Sous Chef at the Michelin-starred Ame and the Executive Chef at Doral’s Dragonfly Izakaya & Fish Market โ€“ which of course is how he originally caught our eye.

His style is marked by his love of Japanese foodie culture paired with his desire to utilize local farms and fresh ingredients.

Today, Hamaya serves on the Leadership team at O-Ku Sushi, part of The Indigo Road Hospitality Group.

O-Ku Sushi has several locations across the United States including Atlanta, Charleston, Charlotte, Jax Beach, Nashville, Raleigh, Washington DC and Greenville. Their menu features a variety of Small Plates, Sushi, Nigiri, Sashimi and Rolls.
